Carob (Caroube, John's Bread, St. John's
Bread, Algaroba) Medium-sized evergreen tree bearing seeds that are ground and used as a chocolate substitute. They are also eaten raw or dried, and ground into flour, high in protein but containing no sugar or starch. Medicinally, the seeds are used to treat stomach disorders and cough. The tree bark is strongly astringent. The tree prefers a well-drained, light sandy loam in full sun, and is drought and wind tolerant. It also tolerates a rocky, alkaline soil.
